Passionné Restaurant Paris + Menu Carte Blanche

Paris, the city of cafés and restaurants, where there’s always room for one more. The latest addition to the 9th Arrondisement is Passionné, immediately south of St Eugène and St Cécile’s Church in what was once a Jewish quarter. This is the real city, just far enough away from Gare du Nord and les Anglais. Le Magnum Bar on Rue du Faubourg Poissonnière with its cat silhouette sign is typical of the area: chic understatement. The bar backs onto the 95 metre long Rue Ambroise Thomas which is terminated by a rusticated stone wall. You can always catch a performance of Carmen or Lakmé at the Palais Garnier (after all this is Opéra Arrondisement) further to the south again but this part of the Haussmannian grid – Rue Bleue, Rue du Conservatoire, Rue de Paradis, Rue Richer – is slightly off the tourist track.

The 4th Edition of the Michelin Guide was published in summer 1960. It contains pointers for visitors to the 9th Arrondisement: “The Rue de Rivoli and the Rue St Honoré draw women in great numbers, for many elegant shops are in these two streets.” And reiterating the message, “The elegant shops of the Rue St Honoré from the Rue de Castiglione to the Rue Royale are the great attractions for the ladies.” Ladies (and some gentlemen) like to lunch and Passionné had barely opened its discreet doors when it received a Michelin star.

Discreet – make that very discreet. The charcoal grey exterior fronts onto the genteel Rue Bergère and sides onto the gated Cité Rougemont. Translucent window blinds give nothing away. The only clue of an exclusive restaurant’s presence is a brass name plaque beside the entrance door. Inside, it’s all about good looks. Good looking interior: designer Kuniko Takano has created a cocoon of darkness in the city of light. The midnight blue walls could be an advertisement for the 2013 film Blue is the Warmest Colour (like Adèle Exarchopoulus’ blue cardigan; Léa Seydoux’s blue hair; Stéphane Mercoyrol’s blue jacket; the blue disco light; the blue protest march smoke; Baya Rehaz cries, “I love the colour blue”).

Good looking staff: Vanessa Paradis and Jérémie Laheurte types (all assassin black suits and killer cheekbones) deliver concise explanations (“Take one bite because inside it’s liquid!”) and precise instructions (“Eat the dishes in this order!”). Bread is constantly replenished; glassware and cutlery continually renewed. The ground floor service bar and basement kitchen are kept busy. Good looking clientele: goes without saying, birds of a feather.

Les mots du Chef: “Passion is at the heart of our gourmet and seasonal menu. I am delighted to welcome you to our restaurant for an extraordinary culinary experience. I source all the ingredients myself and express my passion in making dishes. I also want to express and honour the French terroir with a selection of delicious vegetables. Hokkaido where I was born and raised is a region of Japan close to the same latitude as Paris. My cuisine is where Japanese spirit and French passion come together.”

Lunch is the Menu Carte Blanche and the Prestige Sept Étapes can be wine paired with Évasion (trois verres) or Prestige (cinq verres). For the truly oenologically curious, start with Philipponnat Champagne, the imbibed equivalent of caviar. And then there is caviar, plenty of that too. Chef Satoshi Horiuchi creates colourful edible artworks in an array of contrasting flavours and textures (beetroot and oil for starters). There may be no feathers but there are plenty of trimmings, some edible (flowers), some decorative (steaming shells). And foam – this is Michelin dining. Courses arrive in baskets, in boxes, on rocks, on pebbles and on smooth or textured crockery. Tablescape as topography.

Ian Nairn (Nairn’s Paris, 1968) calls the French capital, “A collective masterpiece, perhaps the greatest in the world.” Abbott Joseph Liebling (Between Meals: An Appetite for Paris, 1986) calls it, “A city of colonnades.” Jonathan Meades (The Times Restaurant Guide, 2002) features just one restaurant in the 9th Arrondisement, Charlot Roi des Coquillages on Place de Clichy. It closed in 2017. Jonathan stated, “The suited service is charmingly urbane.” A tradition that continues on Rue Bergère. Paris, the city of love, where there’s always room for more romance. And a restaurant living up to its name, Passionné.

Hôtel Le Bristol Paris + Café Antonia

La Façon Dont Nous Vivons Maintenant

There aren’t very many good architecture critics and there aren’t very many good restaurant critics and there certainly aren’t very many critics who know their onion domes as well as their onions. Jonathan Meades is one. Café Antonia in Hôtel Le Bristol is too new to have been included in his lively 2002 Restaurant Guide but, to give you a flavour, he critiques three of our all time Parisian favourites. Way back in 2008 we hit one of the French Capital’s most vertigo inducing restaurants: Le Jules Verne, Eiffel Tower, which he awarded 7 sur 10. “The immediate views of this vertical Forth Bridge are captivating. And even were the restaurant situated at street level, it would still be worth patronising. The cooking is precise, considered, mostly balanced. Haughtily offhand service.” Le Jules Verne was where we first tasted the delights of the vineyard of St Véran which would become our tipple of choice at the Oxford and Cambridge Club London.

A few years later, Parisienne socialite Maud Rabanne introduced us to her regular and we haven’t stopped revisiting it since: Le Meurice, Rue de Rivoli, 8 sur 10. “The hotel is a Versailles for the bourgeoise. The building is so large, so labyrinthine, and there is just so much of everything – marble, glass, mirror, gold – that cornucopia soon becomes the norm. The dining room is staffed by several armies of tailed waiters and equipped with no end of trolleys and incendiary devices. The cooking excels when it tends toward the down-home – rather incongruous in such a setting – but disappoints when going in for conventional grand hotel stuff. There’s one problem: the pianist. Shoot?”

Memorably, the day after Notre Dame went up in smoke, we lunched in L’Orangerie, one of three restaurants in the Four Seasons George V, Avenue George V, 10 sur 10. “The George V should really be called the Louis after Louis the decorator. Containerloads of tapestries, gilded console tables, marble busts, rococo mirrors and so on have been brought from Rue St Honoré. The place is bursting with everything save self restraint. It does without saying that the restaurant does swell lines in pomp and neo directoire pediments. Two sorts of salt, two sorts of butter, absolutely no chance of pouring your own wine. The cooking is sumptuous, magnificent, not least because it quite lacks the chichi that mars much hotel cooking. Wines: predictably big names at predictably big prices.”

And that brings us on rather nicely to a big name of the landscaping world. They don’t come much bigger than the Italian born Pimlico office based Lady Arabella Lennox-Boyd. She hasn’t looked back since studying landscape architecture at Thames Polytechnic. In 2018, the then 82 year old was commissioned to redesign Le Bristol’s courtyard garden. “I wanted to get away from the usual hotel good taste with the ubiquitous formal white and green theme.” Instead, she introduced a pastoral idea combining topiary with loose plantings and flowing grasses. “A countryside feeling in the city.” She also wanted “a sense of mystery so that the garden cannot be seen in its entirety from any one point”.

While the façade of Le Bristol is a serious urban presence in stone, the inner facing elevations are light creamy stucco. What would have been a blank party wall in the courtyard garden has been given the green treatment. Forget a mere green wall. This is more like a two storey green mountain of layered planting towering behind first floor level pyramidal topiary set perpendicular to the courtyard garden.

“It was quite unconventional for a Roman girl whose role it was to get married and produce children and maybe have a job as a lawyer. Instead of which I’m in gardens doing manual work and dealing with soil. I have a feel for plants; I have a connection. I sometimes put myself in their shoes: if I was them what would I want?” She smiles, “You’re never too old!”

The landscape designer selected flora native to the greater Paris region or France more broadly, including European beech and hornbeam, Gladwin iris and hart’s tongue fern. “I included plants that provide shelter and nectar in all seasons. This garden is colonised by nature.” Rectangular black slate fountains add to this sensory driven garden. “Designing a garden is like painting with plants but there is so much more to consider. I am proud to have created a space where things are planted according to their natural habitat.” Her little black book includes King Philippe and Queen Mathilde of Belgium, the Duke and Duchess of Westminster, and of course the Oetker family who own Le Bristol.

Lady Arabella’s great chum Countess Bergit Douglas, a relative of the Oetkers, masterminded the Louis XVI interior design of the three Haussmannesque buildings that make up Le Bristol. The hotel has never looked better since Hippolyte Jammet (great name!) opened it in 1923. He must have been something of an Anglophile, naming his hotel after Frederick Hervey, 4th Earl of Bristol, an 18th century connoisseur of luxury travel. The socialite Lady Victoria Hervey is a descendant although the family have long since lost their seat of Ickworth in Suffolk. The dazzling and dazzlingly talented Josephine Baker and her pet cheetah frequented Le Bristol throughout the Roaring Twenties. After a postwar spell as the American Embassy, the hotel was bought by German businessman Rudolf Oetker in 1978. Then in 2014, our Knightsbridge London hangout The Lanesborough became part of The Oetker Collection. Little wonder Le Bristol feels like a home from home.

C’est le déjeuner sur l’herbe encore une fois. That ultimate Parisienne (if not born one soon became one) is the muse of Café Antonia in Le Bristol. Yes, Marie Antoinette. Her mother’s pet name for her was Antonia. Françoise Ravelle revels in Marie Antoinette Queen of Style and Taste (2017), “She singled out creators who had the knack of lifting their art to the height of perfection, and she became closely involved in the design of her dresses, her furniture and her gardens. In the small kingdom of Marie Antoinette her ministers were her couturiers, cabinetmakers, bronze works and painters.” The 18th century Royals’ painter François-Hubert Drouais’ portrait of Marie Antoinette, part of the private collection of Le Bristol, presides over Café Antonia. Her Majesty was passionate about the arts and loved attending the Opéra de Paris where she could escape the Court’s strict etiquette. Café Antonia reflects this sophisticated yet informal outlook, flowing from an expansive drawing room through French doors into the courtyard garden.

Françoise Ravelle reveals, “Perhaps Marie Antoinette’s personal touch is her association with a forever bygone epoch, described by her artist friend Élisabeth Vigée Le Brun, ‘Women reigned at the time – the Revolution dethroned them.’” Females are taking central roles at Le Bristol, from the garden creator to the garniture stylist to the beau monde guests. True to form, there are plenty of Catherine Deneuve and Kristin Scott Thomas doppelgangers holding court in Café Antonia making elegance an art form. And some gentlemen of class as well. “De riens, messieurs,” waves our waiter. Lunch is all about crème d’asperges vertes, avocat; oeuf poché sur toast et saumon fumé; and patisserie du jour (chocolat, beaucoup de chocolat!).

Bob Middleton arrives and whisks us off on a whistlestop tour of the hotel. “I am the Manager of 114 which is one of three food offers in Hôtel Le Bristol excluding the banqueting and the room service. The name comes from its address: 114 Rue du Faubourg St-Honoré. We opened in 2009 and the restaurant has one Michelin star since 2013. There is also the three Michelin star restaurant Epicure overlooking the courtyard garden. Vincent Schmit is our Head Chef in 114 and he is assisted by 25 people who work in the kitchen. Then we have 30 people who work in the restaurant itself. We have a great place, we have a great team, we have great customers, what more can I say?” Vincent Schmit waves up from the lower level kitchen. “Bonne journée!”

And how would Jonathan Meades mark Café Antonia? Bien sûr 10 sur 10.

Hartwell House + Garden Aylesbury Buckinghamshire

Inside the Vale in Stone with Bishopstone and Hartwell Parish

National Trust country house tours are all jolly good but nothing beats the fun of actually lounging, dining, partying and hopping into bed in an historic property. Le grand expérience. We once lunched at Florence Court in County Fermanagh to celebrate the 7th Earl and Countess of Enniskillen returning some rather grand trinkets to their former home but that was a one off despite dining out on it ever since. In a marriage made in heaven, or at least a pairing in Britain at its finest, the dream comes true in the triumphant triumvirate of Bodysgallen Hall, Llandudno; Middlethorpe Hall, York; and Hartwell House in the Vale of Aylesbury. National Trust houses where the four posters are for using. Well if Hartwell was good enough for Louis XVIII (he rented it for five years from 1809) it’ll suit us Francophiles thank you very much. Although His Majesty probably didn’t have to catch the train from London Marylebone. And so, we wave goodbye to the golden tinged terraces of NW1 on a blisteringly hot morn.

We’re tasked with capturing the spirit of the place, its current glory, its essence no less. The present is not a foreign country; they do things better here and now. Although Paris France is our next stop. As Gertrude Stein amusingly muses in Paris France, “You do not mention the relation of French men to French men of French men to French women of French women to French women to French children of French men to French children of French children to French children.” It’s worth mentioning the Frenchman who would become exiled sovereign as his plump features fill a bust and a statue and a painting at Hartwell. The Frenchman who looks down on the dining table of Apsley House on Piccadilly, London, in a portrait by François Pascal Simon, Baron Gérard. “But all art is erotic,” prescribes Adolf Loos in his 1908 lecture Ornament and Crime. Erm, not so sure, but we really do agree with his statement “Luxury is a very necessary thing.” And “An English club armchair is an absolutely perfect thing.” His words “Fulfilment awaits us” have a prophetic ring to them. Unerotic art, luxury and English club armchairs await us.

It’s also worth mentioning a certain French woman. A French woman who was Queen of France for 20 minutes. Marie-Thérèse Charlotte Duchess of Angoulême was the eldest daughter of Louis XVI and Marie Antoinette. The Dauphine joined her uncle to hold court at Hartwell. Her much maligned and misrepresented mother tried to set her daughter on the straight and narrow. On New Year’s Day 1784 the Queen, forgetting cake and remembering the poor, told Marie-Thérèse Charlotte, “The winter is very hard. There is a crowd of unhappy people who have no bread to eat, no clothes to wear, no wood to make a fire. I have given them all my money. I have none left to buy you presents, so there will be none this year.”

First impressions of Hartwell are grand, very grand. And very Jacobean. A feast of late 17th century transomed and mullioned oriels greets us as we swoop down the driveway round the turning circle with its life size statue of Frederick Prince of Wales on horseback and screech the breaks outside the entrance archway. But peeping past the very manicured bush (straight out of a David Inshaw painting) round to the garden front, there’s a perpendicular juxtaposition that would give County Down’s Castle Ward a run for its money. It’s Arcadian Palladian! The wealthy Hampden family built the original house before selling it to the even wealthier Lee family a couple of centuries later. In 1938 the house and 730 hectare estate was bought by conservationist Ernest Cook, grandson of the Victorian pioneer of package holidays Thomas Cook. Not that there’s anything package about bespoke Hartwell House. Ernest Cook saved the ensemble from certain ruin. Historic Hotels owner Richard Broyd would later acquire the leasehold which would in turn would be assigned to the National Trust in 2008 while allowing the house to still be run as a hotel. Lasting impressions of Hartwell are grand, very grand.

The dining room with its pendentive domes and matching Greek key cornice and carpet is more Soaneian than Pitzhanger Manor. The walls are painted lemon sorbet colour and the ceiling lemon ice cream. Contrary to appearances the dining room is 1980s not 1780s. It’s the creation of the architect Eric Throssell who converted Hartwell House from a finishing school to a hotel. A very clever creation at that. The architect amalgamated a closet, secretary’s room, south portico hallway and study to form a coherent space. The closet was reshaped to form an apse balancing that of the former study. French doors are wide open to the terrace. Dinner is served. The menu is elegantly labelled “Hartwell Bill of Fare”. Sourdough and fried tomato bread are followed by a starter of pan seared scallops, apple ketchup, compressed apple and oat crisp. The main course is pan fried turbot, leek spaghetti, sun blush tomatoes, British new potatoes and mussel cream sauce. Pudding is raspberry and elderflower tart, elderflower and mint sorbet. Taste good dining in a good taste dining room. Jacqueline Duncan, Founder of Inchbald School of Design, always reminds us, “I’m interested in taste.” A gentle breeze rustles through the dining room. Such peace and tranquillity. Yet under the fading light outside, tragedy is marked on the lawn. A tiny gravestone reads: “In loving memory of Charmian Patricia baby daughter of Captain and Mrs Conyers Lang died March 30 1924.” Beyond this gravestone, a walled cemetery abuts the estate.

Close to the cemetery a rusted blue sign on the perimeter brick wall reads, “Hartwell, The Church of the Assumption of The Blessed Virgin Mary. The present church (replacing a medieval structure) and modelled on the Chapter House at York Minister, was erected by Henry Keene between 1754 and 1756 for Sir William Lee of Hartwell House. It was an early example of Gothic Revival consisting of an octagon with symmetrical towers at the east and west ends. The interior was remarkable for the beauty of its fan tracery vaulting and the lozenged black and white marble pavement. Photographs taken before the church fell into ruin are in the National Monuments Record collection. Shortly after the 1939 to 1945 war the lead was stolen from the roof. This quickly led to the collapse of the vaulting and, after years of disuse, the remains of the building were declared redundant in 1973 and came into the care of the Redundant Churches Fund in July 1975. The elegance of the building’s design was not matched by the soundness of the construction and in order to preserve what was left, the Fund has carried out extensive works over many years under the direction of Mr Roiser of Cheltenham. May 1982.”

The interior of Hartwell House swaggers and sways between styles and centuries, from the baroque great hall and Henry Keene’s rococo morning room to the Georgian drawing room and library and Jacobean staircase hall. The newels and posts of the staircase are formed of historic carved figures. We return to the dining room a few hours later just as dawn is breaking. There may be no E in Hart but there’s eggs-to-see for breakfast. Sunny side up thank you on the sphinx guarded terrace. Poached eggs and crushed avocado on sourdough toast. It’s oh so quiet. Such peace and tranquillity. A sign in the staff courtyard next to the hotel reads “Beware People”. Thankfully the house and estate are so large there are few bodies about except for the discreet staff.

In 1728 James Gibbs published his bestseller A Book of Architecture Containing Designs of Buildings and Ornaments. “What heaps of stone, and even marble,” he complains, “are daily seen in monuments, chimneys, and other ornamental pieces of architecture, without the least symmetry or order?” The architect and author sets out to remedy this dire situation. “In order to prevent the abuses and absurdities hinted at, I have taken the utmost that these designs should be done in the best taste I could form upon the instructions of the greatest masters in Italy, as well as my own observations upon the ancient buildings there, during many years application onto these studies; for a cursory view of those august remains can no more qualify the spectator, or admirer, than the air of the country can inspire him with the knowledge of architecture.”

The chimneypiece in the great hall looks like it could be taken from the central image of Plate 91 except for a carved plaque replacing the overmantel mirror in the drawing. The mélange of urns and finials over the triumphal Rusticated Arch could come from Plates 146 and 147. And the Gibbs Pavilion looks like Plate 77 minus a dome. The Illustrated Atlas of the World’s Great Buildings by Philip Bagenal and Jonathan Meades, 1990, confirms James Gibbs’ status, “English Georgian was evolved from the designs of the Italian architect Palladio by Sir Christopher Wren, Sir John Vanbrugh, Nicholas Hawksmoor and James Gibbs.”

The Ionic Temple, an eyecatcher viewed from the dining room, is one of several James Gibbs designed parkland features. The rubblestone and ashlar stable block and attached coach house, rebranded Hartwell Court, incorporates parts of a Gibbsian menagerie. Hartwell Court now houses a swimming pool and 16 guest bedrooms in addition to the 32 bedrooms in the main house. It overlooks a private garden guarded by statues of Juno and Zeus. A statue of Hercules remains half hidden in the woodland beyond the church. The Rusticated Arch tunnels under the public road into another walled area known as Hothouse Piece which includes the kitchen garden, orchard and tennis court. A brick plinth marks the location of the Victorian glasshouses.

Restored beyond their former glory under Sir Geoffrey Jellicoe’s landscape renewal scheme in 1979, the mid to late 18th century gardens, offer up a smorgasbord of visual and historic and horticultural and architectural pleasures, some hidden, some unhidden. The prominently placed statue of Frederick Prince of Wales was rescued from obscurity in a shrubbery. In an early case of reclamation, the two narrow informal lakes lie on either side of the middle span of James Paine’s old Kew Bridge in London of 1782, dismantled in 1898 and auctioned in lots.

In The Age of Bronze, 1822, Lord Byron writes, “Why wouldst thou leave Hartwell’s green abode?” Why, indeed, for it’s both peaceful and fun. Hartwell House is the type of place where anything can happen. And it does. The bellboy hands us a poem printed on hotel headed paper titled The Long Driveway to Hartwell. Bonkers has a new. We nod at the line “seize every moment” and chortle at “chaise longue fizz is swell” and when it comes to “it’s a short life on our Lord’s planet” we pray “thank goodness a decent chunk of it was spent at Hartwell House”.

Writing in Edwardian Architecture, Alastair Service describes the host building and its place in the architectural lexicon: “The commission for the Port of London Authority building was won in a competition of 1912 by Edwin Cooper (1873 to 1942), who had recently started a personal practice after working in a series of partnerships. Cooper’s success in the competition of 1911 for the St Marylebone Town Hall was, however, more significant for the future. Reviewing the entries for the competition, the editor of one architectural magazine wrote, ‘We cannot help asking ourselves whether all these colossal columns, domes, towers, groups of sculpture and other imposing features are felt by their authors to be the only natural and inevitable expression of the necessities of the case.’

Such criticism of extravagant building was in harmony with general feeling at the time. And the St Marylebone Town Hall built to Cooper’s designs shows a greatly simplified use of Classicism, emphasising the volumes in Holden’s [architect Charles Holden] way, rather than creating broken Baroque outlines encrusted in sculpture. The mention of Holden’s name is no coincidence. More than anyone else, it was his work that bridged the gap between the attempts at a Free Style and the varieties of Edwardian Classicism.”

The streamlined architecture of Marylebone Town Hall (long deprived of its sainthood), as Alastair Service observes, is more in keeping with a modern sensibility but the bombastic brilliance of Edwin Cooper’s portico is well suited to a Four Seasons flag. It mightn’t have been purpose built, but if those two other bastions of Beaux Arts architecture (The RAC Club and The Ritz) can be beacons of high end hospitality, why not the Port of London Authority building?

La Dame de Pic restaurant is at the end of a short corridor off a vast domed rotunda lounge in the heart of the Four Seasons Hotel. It’s Anne-Sophie Pic’s first foray into the UK. She is the world’s most decorated female Michelin starred chef. Her third generation three Michelin star family owned restaurant is in Drôme; she also has restaurants in Lausanne, Paris and Singapore. Anne-Sophie says, “I know there is no feminine or masculine cuisine but my cuisine is very feminine because I put a lot of intuition, my feelings, into it.” Head Chef Luca Piscazzi brings these feelings to fruition.

White truffle – it’s in high season – is flaked over the cheese and mushroom gnocchi starter. Acquerello risotto main course is flavoured with pumpkin, bergamot and Yellow Bourbon coffee. Poached pear infused with sansho and ginger is decorated with argousier honey and beeswax. Each course is an adventurous fusion of taste and an avantgarde work of art. Unsurprisingly, the restaurant had barely opened before it snapped up a Michelin star. A second followed in hot pursuit.

Four Seasons at 10 Trinity Square may be quite close to the Tower of London and very close toSamuel Wyatt’s Trinity House but its immediate environs are surprisingly discreet. That doesn’t stop the 80 cover dining room being full on a midweek lunchtime. The interior is all about spare luxury. White walls and a tiled dado under a mirrored strip matching mirrored columns are softened by leather banquettes and a cluster of snugs below a central gigantic Chinese lantern.

La Dame de Pic has joined an exclusive set of shops and restaurants in London stocking Rare Champagne. Nicolas Marzolf of Liberty Wines is the UK and Ireland Brand Manager of Piper-Heidsieck and Rare Champagne. While Piper-Heidsieck Champagne is Pino Noir dominant, Rare Champagne is 30 percent Pinot Noir and 70 percent Chardonnay. “Liberty Wines have a warehouse in Clapham,” he explains, “so an order placed by 3am can have a same day delivery by noon.” Harrods, Hedonism and Selfridges are shops selling Rare Champagne. It’s served in Core by Clare Smyth, Claridge’s, Scott’s and Sexy Fish restaurants.

The two vintages available at La Dame de Pic are Blanc 2006 and Rosé 2008. “These are two very different Rare Champagnes,” notes Nicolas. “The year 2006 was warm – winter was pretty mild and there was a summer heatwave. You can see the fullness of the sun in the ripe fruit taste. The year 2008 was cold which resulted in a very delicate cuvée – graceful and not too full bodied. You always have the same aftertaste in all our Rare vintage: duality of warmth and minerality.”

He continues, “The noble origin of Rare Champagne dates back to a presentation to Marie Antoinette and expresses its revolutionary spirit against the trivialization of vintages. Over the last four decades, Rare Champagne has declared only 11 vintages. The tiara adorning the precious bottle features the triumphant vine prevailing over the whims of weather. The bottle design, called Pinte Majeure, is asymmetrical as it was originally mouthblown.” Today, the soft curves of the design pay tribute to Marie Antoinette, thelast Queen of France and the first modern icon, renowned for her ability to set new standards.
